Meet the Chef Behind the Magic

Chef Edina’s journey began in a family kitchen, guided by her mother’s culinary skills and her grandmother’s baking wisdom. That early passion took her all the way to Le Cordon Bleu in Paris at just 16, where she trained in both cuisine and pastry.

From there, she honed her craft under legendary chefs like Chef Yamashita Masataka and Chef Jérôme Chaucesse, and even collaborated with pastry stars like Cédric Grolet and Nicolas Paciello during her time at Fauchon. Her style is global, but her heart remains rooted in local flavours—using the best of Singaporean ingredients to tell stories through dessert.

Her return to Pan Pacific Singapore marks a homecoming, having previously served as Assistant Pastry Chef. Now at the helm of the pastry team, Chef Edina is setting a new standard across the hotel - from weddings and events to the award-winning buffet restaurant Edge, and of course, the showstopping afternoon tea at Pacific Emporium.

Sofitel Singapore City Centre is delighted to launch The Local Table Afternoon Tea in celebration of Singapore's 58th birthday. Indulge in an epicurean afternoon tea experience, inspired by nostalgic flavours that are close to every Singaporean's heart.

Be charmed by 11 delightful treats, including five savoury items and six sweets, all carefully crafted to tantalise the taste buds. Highlights include Foie Gras Butter with Curried Caramelised Candy, featuring creamy foie gras atop a crispy toast, topped with candy wok tossed with curry spices; Plant-based Otah with Spiced Lychee Lime Salsa, which is a delightful twist on the traditional otah, elevated with spiced lychee lime salsa; as well as Musang King Durian Puff, with the treasured Musang King durian variety encased in a cream puff pastry, finished with luscious durian crème chantilly.



Savouries
Highlights include the Chilli Crab Roll, where chunks of blue swimmer crabmeat marinated in sweet, tangy chilli crab sauce are encased in a brioche bun and topped with caviar for a luxurious burst of briny flavour. 

Another treat which takes an innovative twist is the Foie Gras Butter with Curried Caramelised Candy – where creamy foie gras butter on a light toast is topped with caramelised sugar that is infused with curry and spices, resulting in a fragrant bite with layers of fun textures.

Sofitel Singapore City Centre is presenting Les Jardin du Sofitel in celebration of the global Vogue x Sofitel collaboration from 13 February to 9 April 2023.

Taking inspiration from haute couture and spring fashion trends, 1864 will be transformed into a botanical wonderland with a specially curated all-day dining menu featuring edible flowers and fashion elements that are almost too pretty to eat. Launching just in time for Valentine’s Day and International Women’s Day, a gastronomic affair at 1864 is the perfect way to show love and appreciation to oneself, a romantic partner, friend, or co-worker.



Elaborate Floral Décor

Step into an oasis of floral dreams brimming with roses, eustomas, peonies, hydrangeas, and hanging wisterias that are reminiscent of a Parisian floral café in 1864. Crafted by the master artisans at The Floral Atelier, a luxury floral design studio whose roster of clients includes Louis Vuitton, Dior, Saint Laurent, Cartier, and more; the extravagant installation is a sight to behold. Guests who are obsessed with fashion are also invited to come dressed in their best spring ensemble as the installation includes a runway that presents an opportunity for guests to be the star of their own fashion show.

 


Botanical Afternoon Tea


The botanical afternoon tea set ($150 for two guests) takes guests on a sensorial journey by paying tribute to the spring fashion shows. It mirrors the journey of someone dressing up for the occasion, from picking the right dress and shoes to wearing the appropriate make-up. 


Available from 2pm to 5pm daily, savory creations in the line-up include Light Truffle Duck Rillettes Croquette with Apple Lavender, Cod Fish Brandade in Sakura Shell and Ikura, and Creamy Crab Meat with Lemon ChamomileFor sweets, menu highlights including the decadent Saint Honoré Praline, 64% Chocolate Manjari Mousse, as well as Blossom White Chocolate Bar will surely impress. 


In addition to the gastronomic gems, guests can complete the teatime tradition with barista-style coffee prepared to their preference, or choose from more than 20 premium blends of TWG tea including floral infusions such as Amour de Thé, an enchanting potion of delicate rose blossoms and leaves of pure gold, as well as Sakura! Sakura! Tea, a beautiful bouquet of cherry blossoms, and green tea.

 


À La Carte Specialties


Drawing inspiration from spring’s beautiful blooms, the medley of à la carte specialties feature savory masterpieces such as Fish Brandade with Light Citrus Gel and Olive Dust ($28), a perfect combination of creamy fish with a refreshing gel, and Pickled Tomato with Eggplant Caviar and Pesto Cream ($24), a delicious appetizer presented in a whole tomato. 



Other show-stopping highlights include the elegant Pavlova with Citrus Coulis and Exotic Fruits ($20), which comes with a crisp and rich exterior paired with a soft marshmallow interior, and Lemon Tart with Berries and Lemon Balm ($20), a harmonious blend of sweet, buttery crust with zingy lemon curd.

 


Cocktails and Mocktails


While flowers may be the go-to gift for Valentine’s Day and International Women’s Day, floral libations are a much better alternative that can help craft unique, memorable moments. 

Look forward to Spring Symphony ($25), a thoughtfully curated tipple made with Four Pillars yuzu gin, Luxardo Maraschino, and cranberry juice, perfumed with cherry blossom, and Chrysanthemum Sips ($25), offering notes of chrysanthemum vodka, apple juice, lychee juice, and lemon juice, in a teapot.

For teetotalers, opt for Moon Sparkle ($16), a lavender hue mocktail infused with blue curaçao, cherry blossom, apple juice, and elderflower tonic, presented in a canary cocktail glass, or Bella Rosa ($16), a gorgeous red drink combining Seedlip Spice, elderflower syrup, and cranberry juice, poured over floral ice cubes.


Takeaway Cakes

Bring home assorted handmade creations baked fresh in-house daily in small batches. The Honey Cheesecake ($12) brings together a velvety and rich cream cheese layer with a toasty cookie base that is baked to golden brown perfection, while the Caraibe Chocolate Choux ($12) showcases a light and airy puff topped with swirls of decadent chocolate cream. The Raspberry Macaron ($9) is another showstopper, with luscious pink meringues sandwiching whole raspberries and chantilly cream.

Celebrate Birthday Like A Queen With Antoinette

Before I flew off to Sri Lanka for my birthday trip with hubby, I received a lovely surprise cake from Antoinette.


This white chiffon Jasmin cake is definitely very refreshing, something different from their Le Royale cake that I always have.

This soft Chiffon Cake with Walnut Sesame Nougatine layered in between, plays on the tongue with texture.

Wrapped in Jasmine Flower Mousse, decorated with White Chocolate Domes dripped with Osmanthus Gel, White Fungus and Wolfberries.

The cake is not overly sweet, I love the subtle flower fragrance and it resembles an ancient Chinese delicacy - Osmanthus Jelly (桂花糕), which the Empress Dowager CiXi used to love to eat.


The cake pairs very well with tea and is a lighter alternative to those typical creamy sweet birthday cakes.

Definitely my new favourite cake, fit for a 'Queen' and a huge thank you to the lovely peeps at Brandcellar for the lovely surprise!

Workout With Mummy Dearest In The Sky This Mother's Day

I woke up early and asked mummy dearest to get dressed for exercise and brought her to Singapore Flyer one morning. It was a preview of their upcoming event in celebration for Mother's Day.


Mummy have never been up Singapore Flyer - the world's largest giant observation wheel, so this was a good opportunity to show her what goes up there, as well as a treat for the mind and soul. We were going for an hour long workshop - 'Workout In The Sky' and other than being in celebration on Mother's Day, it was also a part of Mind Body Spirit Festival 2013.


So, after meeting up with Malcolm and his God-mother, we gathered our mats and off we went into the capsule!


Led by instructors in the art of Yoga, Pilates and Fitness, Singapore Flyer aims to offer something truly unique and memorable as they celebrate this day not just for mothers but for everyone to enjoy a workout in specially fitted capsules 165 meters above ground!


My mum and me have never done any yoga or pilates before, but seriously after that 1 hour session, both of us felt stretched, relaxed. I never felt tired in the afternoon and I slept super well that night. Look at how much fun we had in the capsule (with our dearest mums and friends) and I believe you will be registering once you are done reading this blog post! (Hehehe. I'm a  pro blogger right? Keep taking photos... *Just an excuse to hide from some exercises. LOL!*)


Overlooking Singapore’s iconic skyline, the Mind Body Spirit Festival is an ideal opportunity for mothers – young and old and families alike to experience something truly unique and unforgettable. You wana sign up for it already right? Don't forget to bring your whole family along!


Festival goers will also enjoy fantastic activities on the ground. Apart from the exclusive “Workout In The Sky”, additional health and fitness workshops will be conducted within the Singapore Flyer complex on both days from 8.30am-8pm.

Participants can look forward to performances of yoga stunts, dances, capoeira and live music at the Greek Theatre. Flowers will also be given to moms who will come attend the
12 May workshops.

Registration for the workshops closes on the 8 May. Tickets entitles participants complimentary entry to the Mind Body Sprit Festival at West Promenade, as well as performances at the Greek theatre.

Get Your Wishes Come True At Singapore Flyer

From 17th November 2012 to 1st January 2013, Singapore Flyer transformed its premises to a Christmas Village where we can all enter into a world where wishes are fulfilled and a dazzling spectacle of more than 3 million LED Christmas lights awaits!


It's become a tradition at Singapore Flyer every year as it rise its Christmas tree to be the tallest in Singapore. Standing at a mammoth 83m, the addition of Santa Claus and his sleigh adds a new touch to this year's display.


This year with the addition of a million dollar project - The Christmas Village, Singapore Flyer will definitely set the mood for all visitors and Santa Claus is definitely here in town!


In the village, not only would you get to visit the Christmas wonderland, you can also shop and play with Santa! Approximately 2,000,000 LED lights were used to create this village and it's definitely not to be missed!

See how much you can explore in the village?! There's a Santa's Workshop, Panda Visiting Corner, Rudolph A-Frolicking etc...

First stop, Santa's Workshop! I got to talk to Santa Claus and hug him!!! #LikeAKid

Santa gave me a little Panda bear! Yeah!

And on the other side of Santa's Workshop, me and hubby were lead to a little secret garden beyond where a huge Christmas Tree stands for us to take non-stop photos!!!


Write a letter to Santa at the cozy fireplace corner. I bet your wishes will come true! Hehehe...



And don't forget to drop the letter in the mailbox before you leave!



Now, I know you can't wait to visit the village. Keep yous eyes on the lookout as you might find cute little elfs, reindeers and of course pandas and polar bears amidst the brightly lit-ed enclosure!
