From 15 March to 15 June 2026, Sofitel Singapore City Centre invites guests to enter a playful world where afternoon tea is no longer just dainty pastries and polite sips of tea. Instead, the Carnival-Themed Afternoon Tea at 1864 turns the entire experience into a delicious spectacle of illusion, surprise and imagination.

Think of it as a carnival for the tastebuds where nothing is quite what it seems. Chocolate “burgers” reveal tropical sweetness, churros arrive crowned with caviar, and familiar snacks transform into delightful culinary tricks. Inspired by the whimsical magic of a carnival fairground, the tea set playfully blurs the line between sweet and savoury, turning classic flavours into a theatrical parade of edible curiosities.



A Sweet Parade with Unexpected Twists

The show begins with a charming illusion: a Chocolate Burger Patty layered with mango passion jelly and nestled between shiso and sesame brioche. It looks like a cheeky mini burger, but one bite reveals a bright tropical sweetness that surprises the palate.

Then comes the Lemon & Vanilla-Infused Polenta Chips, hand-cut and served with raspberry ketchup and a sprinkle of fleur de sel that's crisp, tangy and delightfully addictive. Just when you think the carnival couldn’t get any cheekier, the “RFC” (Racines Fried Chicken) White Chocolate Truffle Drumstick makes its appearance. Coated in crunchy cereal, it looks convincingly like fried chicken but melts into silky sweetness.

The playful surprises continue with Coconut Arancini, which hides mochi and finger lime caviar within its crisp exterior, and the charming Corn in Cup, reimagined with lime crèmeux, ricotta and a touch of chilli for a flavour that dances between creamy and zesty.

Savoury Delights in Sweet Disguise

Just when you think you’ve figured out the game, the savoury creations step onto the stage to flip expectations again. 

The Beurre Noisette Churros arrive looking innocent enough, until you discover they’re dusted with eggs and luxurious caviar instead of sugar. A delightful plot twist. Next, the Truffle Corn Mousseline Cone topped with salted popcorn delivers a playful crunch, while the elegant Balik Salmon Macaron hides cucumber and trout roe within its delicate shell.

The surprises keep coming with the Sour Crème & Onion Financier, layered with smoky bacon and aged Comté cheese, and the whimsical Foie Gras Lollipop, balanced beautifully with Granny Smith apple and marigold. Each bite feels like another act in this edible carnival performance.

Drinks Worthy of the Spotlight

No carnival would be complete without a little spectacle, and the signature beverages deliver exactly that. The Popcorn Dream arrives crowned with a fluffy cloud of cotton candy- nostalgic, playful and incredibly Instagram-worthy.

Meanwhile, the dramatic Berry Carnival glows in ruby tones, presented in a crystal-clear glass where a gentle flame flickers beneath, creating a mesmerising moment before the first sip. Born in Malaysia, Chef Amy discovered her love for cooking at home beside her mother, where early lessons in comfort and connection quietly shaped her path. Formal training later refined her craft, while an introduction to French cuisine defined her signature style - one rooted in finesse, balance, and timeless technique.

Her dedication earned her a Gold Medal at Food & Hotel Asia, but beyond accolades, it is her quiet confidence and thoughtful restraint that define her cooking today. More than a celebration, this dinner stands as a tribute to the women who continue to shape kitchens, cultures, and communities.


When French Technique Meets Nanyang Influence

The evening opens with a dish that perfectly mirrors Chef Amy’s culinary identity - a Nanyang-style foie gras that bridges classical French craft with deeply familiar Southeast Asian flavours. Pan-roasted and gently coffee-cured, the foie gras is layered with cocoa nibs and salted kaya butter, then served with warm brioche and finished with a delicate coffee jus. Instead of the expected berry pairing, guests encounter a flavour profile that feels both nostalgic and refreshingly modern.

The main course continues this dialogue between comfort and sophistication. Friselva pork jowl, chosen for its natural tenderness and gentle marbling, is slow-cooked before being lightly grilled for depth. Paired with chorizo and artichoke barigoule and lifted by a vibrant sauce verte, the dish delivers warmth without heaviness. There is something deeply reassuring about a plate that understands restraint.

Dessert arrives as a quiet nod to childhood memories. Inspired by the Black Forest cake Chef Amy grew up loving, Noir layers brandied cherries with varying chocolate textures in a reimagined composition that feels both elegant and familiar. It does not overwhelm, it lingers gracefully, like the final notes of a well-composed piece.

A Table for One at Racines


Racines presents a delectable five-course menu that melds French techniques with sustainably sourced

ingredients for a luxurious dining experience. The dinner begins with an amuse bouche of Crispy Duck Rillettes Croquette, featuring a 12-hour sous vide French Magret Duck, shredded and made into croquette, and served with a smoky, tangy and sweet piquillo pepper sauce. Next, indulge in a light appetiser to stimulate the appetite – Hamachi & Salmon Carpaccio, where fresh fish is lightly seasoned with sea salt and toasted sesame oil, arranged on a bed of dill oil and Packham pear vinaigrette, topped with crisp ginger and Avruga caviar. Starters
The gastronomic journey begins with five seafood and fruit-based salads; the quintessential seafood on
ice with a spread of Lobsters, Oysters, Poached Tiger Prawns, Scallops and Black Mussels, followed by
selection of fresh sashimi and sushi, and seafood-based snacks consisting Oyster Croquettes, Fried
Prawns, Seafood Spring Rolls and Racines’ crowd favourite Ngoh Hiang.


Mains
The epicurean affair include elevated mains in the French stations such as Pan-seared Atlantic Sea
Scallops with Fennel Confit and Herbs, French Magret Duck Breast with Orange Reduction which is
spice-cured for 6 hours, and Baked Rock Lobsters with Garden Basil Béarnaise made à la minute.

Highlights from the Chinese station include Seafood Porridge that comes with generous amounts of

of aromatic herbal flavours from a 4-hour braise and then steamed with Chinese herbs within a lotus leaf. Not to be missed are the live stations serving Roasted Beef Tenderloin with Morel Jus, Salmon Confit with Crème Fraîche and Blinis, as well as Smoked Salmon Gravlax.


Desserts
French desserts take centre stage with over ten exquisitely handcrafted desserts to choose from.
Highlights include Spiced Pear and Berries Baumkuchen which is exclusively curated for the occasion,
Berry Tarts, and a repertoire of classic French desserts such as Raspberry Eclairs, Fraisier, Caramel
Choux, assorted Verrines and Macarons.

Paying tribute to the hotel’s French roots, Sofitel Singapore City Centre is presenting a spectacular semi-buffet brunch in commemoration of Bastille Day, otherwise known as La Fête Nationale (French National Day), on 17 July 2022.


The menu will be an array of French and Asian classics that will add je ne sais quoi to the occasion. Your choice of entrée will come along with a seafood platter, dessert platter, and a curated spread of appetisers, crêpes and waffles.



The enticing ensemble of appetisers ranging from Beef Tatare with Cured Egg Yolk to Baked Escargots with Mushrooms and Herbs will play on your tastebuds as you wait for your entrées. You can also expect French favourites such as Sautéed French Bouchot Mussels in Saffron White Wine, Steak Frites, and Coq Au Vin, in addition to Asian specialties such as Tiger King Prawn Noodle Soup, and Yellow Croaker Fish with Glass Noodles. The feast ends on a decadent note with a line-up of sweet treats ranging from Paris–Brest, Canelé, Tropézienne, to Crêpes Suzette.
