If there's one thing Singaporeans can agree on, it's that food is at the heart of every celebration.

This National Day season, Edge at Pan Pacific Singapore is bringing together many of Singapore's best-loved flavours for its annual 'Flavours of the Lion City' buffet, running from 10 July to 9 August 2026. A Buffet Inspired by Singapore's Culinary Heritage

Curated by Executive Chef Andy Oh and his culinary team, the buffet pays tribute to the dishes many of us grew up enjoying while adding Edge's signature premium buffet experience.

Expect a generous spread featuring both familiar hawker-inspired favourites and elevated seafood and meat dishes, all prepared using quality ingredients.

Some of the local highlights include:

  • Teochew-style Steamed Local-farmed Hybrid Grouper

  • Braised Kong Bak served with Lotus Leaf Buns

  • Wok-fried Hokkien Prawn Noodles wrapped in fragrant Opeh Leaf

  • Fried Rice with Crispy Pork Lard

  • Poached Local-farmed Xiao Bai Cai with Egg White Crab Meat Sauce

Alongside these local classics are hearty international creations including Baked Local-farmed Barramundi with Chilli Pesto and Cilantro, Steamed Pacific Jumbo Clams with White Wine and Garlic, Smoked Pork Belly with Caramelised Pineapple Sauce, Pot Pie Lamb Stew, and many more.


Don't Miss the Dinner-Only Charcoal Grill

If you're visiting for dinner, make sure you leave room for the live charcoal barbecue station.

Fresh seafood and meats are grilled to order, including:

The dinner buffet also features some of Edge's signature favourites that regular diners will recognise, including the Signature Salt Baked Crab, Giant Cast Iron Pan-fried Oyster Omelette, Barbecued Sambal Stingray, and plenty more seafood selections.

One dish that's gripping my attention has got to be the Coffee-glazed Pork Rib at Hai Tien Lo, priced at S$40 nett.

Instead of overpowering the meat, the Nespresso Congo Organic blend is transformed into a glossy glaze that adds roasted depth and aroma. The sweetness of apple jam, tomato sauce and fragrant Shaoxing wine rounds everything out beautifully, creating a balanced sweet-and-savoury profile that sounds both comforting and refined. PLUME's Coffee Omakase Is Probably the Most Creative Experience

If you're looking for something a little different, PLUME has created what is probably the most immersive offering of the collaboration - a S$40++ Coffee Omakase Experience.

Rather than serving a single coffee cocktail, the experience unfolds across several courses:

  • Peaberry Theory welcomes guests with a cocktail combining coffee, dark rum, cherry brandy and bitters.
  • A playful coffee-infused jello shot pairs roasted coffee notes with limoncello gin and grapefruit zest.
  • A clarified whisky and coffee tasting is elevated further with burning coffee incense infused with cinnamon and nutmeg, creating an aromatic experience that engages both taste and smell.

Pacific Emporium Unveils an Elegant English Afternoon Tea Menu

From 22 June to 18 November 2026, Pacific Emporium at Pan Pacific Singapore invites guests to indulge in a refined English Afternoon Tea inspired by timeless British classics. Curated by Executive Sous Chef Cheah Hun Leong and Executive Pastry Chef Edina Si, the experience is available daily with seatings from 1pm–3pm and 4pm–6pm.

The menu begins with a refreshing Royale Lavender Earl Grey welcome drink, followed by elegant savouries including Duck Rillettes Mille-feuille with Siberian caviar, Bacon-wrapped Shrimp, Mini Earl Grey Salmon Bagel, and Virginia Ham Quiche

Sweet treats include Raspberry Hazelnut Royaltine, Pink Grapefruit Mint Gâteau, Pistachio Kunafe-style Tart, and freshly baked Classic and Yuzu Scones served with English clotted cream and raspberry jam.

On weekdays, you'll get to enjoy the afternoon tea with the sweet and savoury creations presented on an elegant three-tiered stand and a choice of signature main course - Classic Chicken Pie, Braised Beef Short Ribs, Kedgeree, and Fish and Chips. The experience concludes with a Green Apple Sorbet as a palate cleanser, served with English breakfast tea jelly, dill, and celery.

While weekends offer a buffet-style experience with unlimited mains, desserts and Chef's Speciality Showcase, including the fun DIY Mango Pani Puri. Every set includes a selection of TWG teas or Robert Timms coffee, with the option to add a glass of Taittinger Brut Réserve Champagne sweet and savoury creations are presented on an elegant three-tiered stand for $20++.

Dive Into "A Sea of Flavours" at Edge, Pan Pacific Singapore

If there’s one thing I can never resist at Edge, it’s when they decide to go all out with seafood… and their latest "A Sea of Flavours" dinner buffet will defnfitely be a full-on feast for seafood lovers!

Available from 15 May to 21 June 2026, every Friday to Sunday evening, this limited-time spread at Pan Pacific Singapore brings together towering seafood-on-ice selections, smoky grilled favourites, rich Asian flavours, and plenty of indulgent comfort dishes all in one dinner experience.

Curated by Executive Chef Andy Oh and his culinary team, the buffet stars everything from Sustainable Boston Lobster, Snow Crab, Tiger Prawns, Pacific Clams and Black Mussels, to comforting crowd-pleasers like Salt-baked Mud Crab with Chilli Sauce and Nam Jim Jaew, Stir-fried White Pepper Crab with Scallion, Pulpo a la Gallega (Galician Octopus Tentacle), Creamy Salted Egg Yolk Crab and Lobster Bisque with Cognac. Just the mention of Salt-baked Mud Crab and Octopus Tentacle is enough to make me jump off my seat and making a reservationa already!

But what I love about Edge buffets is that it’s never just seafood. Beyond the ocean treasures, there’s also a generous spread of premium meats and international dishes. Japanese Sashimi and Assorted Sushi and Maki, House-smoked Pork Belly, Chef Andy’s Signature Penang Char Kway Teow, Mud Crab Dum Biryani, Tandoori Fish Tikka, and even 12-hour braised Tajima Wagyu Beef Short Rib, Mayura Station Chocolate-fed Wagyu Beef with Ponzu and Braised Leek and Wok-fried Crispy Frog Leg with Salt and Pepper. Basically… come hungry. Very very hungry.

And of course, dessert deserves its own spotlight too! The live dessert station featuring Mango Pani Puri (which got me popping a few on my last visit), alongside sweet treats like Yam Mousse Cake, Peach Tart, and Honey Jelly with Snow Bird’s Nest and Aloe Vera.

To complete the experience, you can also top up $78++ for a bucket of five bottles of The Portman Lager, specially brewed by Paulaner Bräuhaus Singapore for Pan Pacific Singapore.

There are some places in Singapore that quietly become part of our memories without us even realising it and Pan Pacific Singapore is definitely one of them...

Whether it was admiring its iconic atrium, celebrating special occasions over endless buffet spreads at Edge, or simply passing by Marina Bay and spotting its unmistakable silhouette against the skyline; Pan Pacific Singapore has long felt like one of those landmarks woven into the story of Singapore itself. And this year, the hotel celebrates a truly incredible milestone - 40 years of hospitality excellence!

Opened in 1986 as one of Singapore’s pioneering luxury hotels, Pan Pacific Singapore has spent the last four decades evolving alongside the city. Today, the hotel stands proudly in the heart of Marina Bay with 790 guestrooms and suites, award-winning dining concepts, wellness facilities, and expansive event spaces that have hosted countless celebrations, weddings, conferences, and milestones through the years.

But what makes this anniversary feel especially meaningful is how much of Singapore’s own journey seems reflected within its walls.


A Hotel That Grew Together With Singapore

Over the years, Pan Pacific Singapore has continuously reinvented itself while still holding onto the elegance and warmth many guests remember fondly.

Some of the hotel’s biggest transformations include the launch of the Ocean Ballroom in 2000, which strengthened its place as one of Singapore’s leading MICE destinations, followed by a major room refurbishment in 2012. Pan Pacific Singapore was actually the first hotel in Singapore to introduce NETS back in 1986.

Beyond dining and luxury experiences, the anniversary celebrations also include “A Voyage of Hue and Imagination,” an art showcase by Dr. Lowly displayed within the hotel’s public art space on Level 2 of Pan Pacific Singapore, from now until 1 June 2026.

It highlights his signature "Squeeze and Splatter" technique - dynamic bursts of acrylic that transform spontaneity into structure and disorder into visual poetry. Inspired by nature and emotion, Dr. Lowly’s works explore imagination, impermanence, and hope. Each canvas becomes a dance between control and release, echoing experience, mystery, and renewal.
