This March, Sofitel Singapore City Centre invites guests to slow down for an evening shaped by intention. In honour of International Women’s Day, the hotel presents a limited-time three-course dinner created by Senior Sous Chef Amy with a menu that speaks softly yet confidently about heritage, memory, and the evolving voice of women in modern kitchens.

Available from 1 to 31 March 2026 at Racines, the experience is less about spectacle and more about storytelling, the kind that lingers long after dessert.


A Culinary Voice Rooted in Story

Born in Malaysia, Chef Amy discovered her love for cooking at home beside her mother, where early lessons in comfort and connection quietly shaped her path. Formal training later refined her craft, while an introduction to French cuisine defined her signature style - one rooted in finesse, balance, and timeless technique.

Her dedication earned her a Gold Medal at Food & Hotel Asia, but beyond accolades, it is her quiet confidence and thoughtful restraint that define her cooking today. More than a celebration, this dinner stands as a tribute to the women who continue to shape kitchens, cultures, and communities.


When French Technique Meets Nanyang Influence

The evening opens with a dish that perfectly mirrors Chef Amy’s culinary identity - a Nanyang-style foie gras that bridges classical French craft with deeply familiar Southeast Asian flavours. Pan-roasted and gently coffee-cured, the foie gras is layered with cocoa nibs and salted kaya butter, then served with warm brioche and finished with a delicate coffee jus. Instead of the expected berry pairing, guests encounter a flavour profile that feels both nostalgic and refreshingly modern.

The main course continues this dialogue between comfort and sophistication. Friselva pork jowl, chosen for its natural tenderness and gentle marbling, is slow-cooked before being lightly grilled for depth. Paired with chorizo and artichoke barigoule and lifted by a vibrant sauce verte, the dish delivers warmth without heaviness. There is something deeply reassuring about a plate that understands restraint.

Dessert arrives as a quiet nod to childhood memories. Inspired by the Black Forest cake Chef Amy grew up loving, Noir layers brandied cherries with varying chocolate textures in a reimagined composition that feels both elegant and familiar. It does not overwhelm, it lingers gracefully, like the final notes of a well-composed piece.

Sofitel Singapore City Centre is presenting Les Jardin du Sofitel in celebration of the global Vogue x Sofitel collaboration from 13 February to 9 April 2023.

Taking inspiration from haute couture and spring fashion trends, 1864 will be transformed into a botanical wonderland with a specially curated all-day dining menu featuring edible flowers and fashion elements that are almost too pretty to eat. Launching just in time for Valentine’s Day and International Women’s Day, a gastronomic affair at 1864 is the perfect way to show love and appreciation to oneself, a romantic partner, friend, or co-worker.



Elaborate Floral Décor

Step into an oasis of floral dreams brimming with roses, eustomas, peonies, hydrangeas, and hanging wisterias that are reminiscent of a Parisian floral café in 1864. Crafted by the master artisans at The Floral Atelier, a luxury floral design studio whose roster of clients includes Louis Vuitton, Dior, Saint Laurent, Cartier, and more; the extravagant installation is a sight to behold. Guests who are obsessed with fashion are also invited to come dressed in their best spring ensemble as the installation includes a runway that presents an opportunity for guests to be the star of their own fashion show.

 


Botanical Afternoon Tea


The botanical afternoon tea set ($150 for two guests) takes guests on a sensorial journey by paying tribute to the spring fashion shows. It mirrors the journey of someone dressing up for the occasion, from picking the right dress and shoes to wearing the appropriate make-up. 


Available from 2pm to 5pm daily, savory creations in the line-up include Light Truffle Duck Rillettes Croquette with Apple Lavender, Cod Fish Brandade in Sakura Shell and Ikura, and Creamy Crab Meat with Lemon ChamomileFor sweets, menu highlights including the decadent Saint Honoré Praline, 64% Chocolate Manjari Mousse, as well as Blossom White Chocolate Bar will surely impress. 


In addition to the gastronomic gems, guests can complete the teatime tradition with barista-style coffee prepared to their preference, or choose from more than 20 premium blends of TWG tea including floral infusions such as Amour de Thé, an enchanting potion of delicate rose blossoms and leaves of pure gold, as well as Sakura! Sakura! Tea, a beautiful bouquet of cherry blossoms, and green tea.

 


À La Carte Specialties


Drawing inspiration from spring’s beautiful blooms, the medley of à la carte specialties feature savory masterpieces such as Fish Brandade with Light Citrus Gel and Olive Dust ($28), a perfect combination of creamy fish with a refreshing gel, and Pickled Tomato with Eggplant Caviar and Pesto Cream ($24), a delicious appetizer presented in a whole tomato. 



Other show-stopping highlights include the elegant Pavlova with Citrus Coulis and Exotic Fruits ($20), which comes with a crisp and rich exterior paired with a soft marshmallow interior, and Lemon Tart with Berries and Lemon Balm ($20), a harmonious blend of sweet, buttery crust with zingy lemon curd.

 


Cocktails and Mocktails


While flowers may be the go-to gift for Valentine’s Day and International Women’s Day, floral libations are a much better alternative that can help craft unique, memorable moments. 

Look forward to Spring Symphony ($25), a thoughtfully curated tipple made with Four Pillars yuzu gin, Luxardo Maraschino, and cranberry juice, perfumed with cherry blossom, and Chrysanthemum Sips ($25), offering notes of chrysanthemum vodka, apple juice, lychee juice, and lemon juice, in a teapot.

For teetotalers, opt for Moon Sparkle ($16), a lavender hue mocktail infused with blue curaçao, cherry blossom, apple juice, and elderflower tonic, presented in a canary cocktail glass, or Bella Rosa ($16), a gorgeous red drink combining Seedlip Spice, elderflower syrup, and cranberry juice, poured over floral ice cubes.


Takeaway Cakes

Bring home assorted handmade creations baked fresh in-house daily in small batches. The Honey Cheesecake ($12) brings together a velvety and rich cream cheese layer with a toasty cookie base that is baked to golden brown perfection, while the Caraibe Chocolate Choux ($12) showcases a light and airy puff topped with swirls of decadent chocolate cream. The Raspberry Macaron ($9) is another showstopper, with luscious pink meringues sandwiching whole raspberries and chantilly cream.
